

I don’t claim to be an expert cook, or expert in any specific cultural food, but I know what I like. This ‘recipe’ or any variation of it is my go to favorite. It’s quick, uses almost any protein, and only dirties one pan. Who doesn’t like that? I had some left over organic chicken and wanted to make a quick easy lunch with it. So for my weekend lunch I made a soft taco, using chicken. I quickly warmed up the chicken with olive oil, a sprinkle of cumin, chili powder, and lime juice. I love these small wraps, because they aren’t too much wrapper, but they close just nicely. I put a smear of sour cream on each topped with store bought salsa, homemade would be best, but I didn’t have any. The warm chicken is placed on top, with a sprinkle of cheddar cheese and fresh cilantro. Yumm. They were quick and delicious and they photographed pretty well too.
