Vegetarians and vegans look away… I haven’t made this for a while, but I love the flavor of pancetta. I get a slice about 1 cm thick and cube it for sauteing. I added thinly sliced onion to soften, and then the zucchini to brown a bit. The peppers were cut up small and added next, followed by the small tomatoes. All of these veggies are organic, but not the pancetta. I added some seasoning and let it cook away. I didn’t have any fancy pasta, so I just used organic macaroni. At the end I dressed the whole thing with a bit of lemon juice and parmesan cheese. For the palette I chose the less obvious softer tones from the images. I think it’s really nice.
It’s been a windy, quiet Sunday. I’ve been having cat drama lately and I think she’s adapted to some of the changes I’ve made. I now have the liter box in my living room… temporarily, but thankfully, no protest puddles around the house. It’s a start, but I do intend to get the liter box back to it’s original spot eventually. Little by little. We have a short week next week, due to professional development on Monday. I’m thinking of wearing a new pair of shoes as most of the day will be spent sitting and not running around too much. Maybe I’ll even get a photo of my look, we’ll see.
